Ingredients:

- leeks or scallions 🧅
- chickpeas/beans and/or corn 🌽

- apple cider vinegar or balsamic vinegar
- pumpkin seed oil 💦
This incredibly simple salad is a classic at our summer picnics, since it requires just a few seasonal, local ingredients and very little effort to prepare. It also works great when prepared a day in advance, as this allows the flavors to meld together nicely.??
I didn’t include exact ingredient measurements in this recipe, since I always measure them “by eye.” ? I think this is the best way, since it depends on how many “salad-hungry” people you’re serving, and it also lets me adjust the ingredient ratios myself. If I happen to cook too much barley, I use some of it for this salad, and the rest goes into a risotto. If there’s any leftover salad from a picnic, I’ll eat it over the next few days, since it keeps really well in the fridge. #nofoodwaste ✊?♻️
