raw buckwheat porridge
Today I’d like to share an idea for a slightly different breakfast that will really fill you up and provide you with all the essential nutrients.✨ The star of this breakfast is Slovenian organic buckwheat porridge, which has long played an important role in the local diet—in dishes like žganci, štruklji, močnik, bread, you name it.??‍? Thanks to local production, its excellent nutritional profile, interesting yet familiar flavor, and simple preparation, it’s finding its way onto plates more and more often these days.?️The recipe below makes one hearty serving, but if you add some fruit and other toppings to the porridge, you can split it into two smaller portions and share the other one with someone you love ??‍?‍?? Or you can store it in the fridge for the next day.

Preparation Instructions:

1. Step Soak the buckwheat groats in cold water overnight, then rinse them thoroughly through a strainer the next morning to remove any slight stickiness that may have developed.💦 Transfer it to a blender (if you don’t have one, use an immersion blender) and add the remaining ingredients, except for the sweetener. Blend, then taste the mixture to see how much 🤏🏼 (if any) sweetener you’ll need to add—this depends on which plant-based beverage you use, as they vary in sweetness. Adjust the consistency of the porridge by varying the amount of plant-based beverage. At this point, you can finish this simple preparation process, transfer the porridge to a bowl, and top it with freeze-dried, fresh seasonal, or frozen fruit, a spoonful of jam, seeds, nuts (or nut butters), or a spoonful of yogurt for a fresh touch. Whatever you have on hand and makes your mouth water in the morning!🌞 But if you want these flavors to take you back to your childhood and remind you of the taste of chocolate spread, just add some hazelnut butter and cocoa. If the mixture is too thick, add another spoonful of plant-based milk and blend it again, then serve with toppings on top.
2. Step There’s only one key ingredient in this low-carb recipe—Slovenian organic buckwheat porridge, which you can find at Rifuzl on Rinfuzo and is, from a nutritional standpoint, a superior food. Soaked overnight, it’s also excellent in salads, soups, or as a side dish. Did you know that by planting buckwheat, we help bees survive the winter, since it produces abundant honey right at the end of summer, when there’s no other nectar or pollen available in nature? 🍯This is how we help preserve bees, which have a positive impact on biodiversity in nature and, through pollination, make a large part of our domestic food production possible.🐝🌱
