Lentil Curry

Ingredients:

  • 150 g green lentils
  • 1 carrot
  • 1–2 onions
  • 4 dl of water
  • salt
  • 1 teaspoon of sweet paprika
  • 1 teaspoon of curry mix
  • 1 inch of fresh ginger

Preparation Instructions:

1. Step

Soak the lentils in lukewarm water for at least 30 minutes. Meanwhile, cut the onion and carrot into medium-sized pieces. In a small pot, sauté the onion in a little oil until golden brown, then add the carrot. Sauté everything together a little longer, then add the rinsed lentils. Pour in 4 dl of water and cook over medium heat for at least 40 minutes. It’s better for the lentils to be overcooked than undercooked. Add a little more water if needed. Meanwhile, cook some rice, polenta, or whatever you’d like to serve on the side. Grate the ginger (I use about one teaspoon) and add it to the pot. Then season everything with salt, curry powder, and paprika. Finally, you can mash everything together or leave it in chunks. I like it somewhere in between. :)Serve with scallions.
