  • It’s great to soak the lentils in water for a few hours or even overnight before cooking, as this reduces the cooking time.Of course, you don’t necessarily have to use black lentils—I chose black ones mainly because of their color and “earthy” flavor, which, according to my taste buds, pairs perfectly with the flavor of button mushrooms or other mushrooms. The recipe turned out just as well for me with green lentils.
  • Don’t rinse the cooked lentils with water, as we don’t want any extra moisture in the meatball mixture.You can also use a food processor to chop the mushrooms, onion, and garlic, but make sure the mushroom pieces aren’t too small, as that would prevent them from contributing to the fine texture.
  • You can omit the nectarine or replace it with another seasonal fruit of your choice. You can also substitute spinach or Swiss chard with seasonal greens (lettuce, arugula, kale, cabbage…).
  • You can also grill the prepared patties or bake them in the oven.

Ingredients:

  • brioche buns
  • mustard sauce (ratio: 2 tablespoons mustard + 2 tablespoons cooked chickpeas + 1 tablespoon olive oil + a little water, if needed)
  • vegan sauce (ratio: 2 tablespoons Bioway vegan mayonnaise + 2 tablespoons coconut yogurt)
  • Vinegar and Kimchi Yeast
  • roasted Melancan
  • (roasted) nectarine
  • Swiss chard or spinach

Preparation Instructions:

1. Step First, put the black lentils on to cook, and in the meantime, prepare the other ingredients.
2. Step Dice the mushrooms into small cubes, then sauté them in a preheated pan without oil until they release most of their moisture and begin to brown slightly.🤟🏻 Set them aside, then sauté the chopped onion and garlic in a tablespoon of oil in the same pan.
3. Step Drain the cooked lentils using a colander, but do not rinse them with water! Let them sit in the colander for at least 5 minutes (in the meantime, arrange the other ingredients on the counter), then transfer them to a bowl, mash half of them with a fork, add the sautéed mushrooms, onion, and garlic, sunflower seeds, chopped herbs, a little ground pepper, and, to taste, some smoked pumpkin or soy sauce.💯
4. Step Stir it, taste it, adjust the seasoning if needed, then add half a cup of spelt flour, stir again, and add just enough flour to achieve a dough that’s not too sticky but not too dry.
5. Step Shape the meatballs and fry them in an oiled pan.💥
6. Step Roast the eggplant, slice the nectarine (and roast it if you like), and prepare the Swiss chard if needed.
7. Step To make mustard sauce, blend mustard, cooked chickpeas, and a little olive oil in a blender.🤏🏻
8. Step For the second sauce, just mix the vegan mayonnaise and coconut yogurt with a spoon.🥄
9. Step You assemble all the prepared ingredients, including the kimchi, into a funky burger, following your own logic.🦖
