Instructions

Mate is traditionally prepared in a gourd called a mate or cuia, and we sip it through a metal straw called a bombilla. We fill the gourd one-third full with crushed leaves and pour in water that isn’t quite boiling. Let it steep for about three minutes, then drink the tea through the straw. Pour in more hot water and sip the mate through the straw after a few minutes. Repeat the process once or twice more, until there is no more flavor left in the crushed leaves. Alternatively, prepare mate similarly to tea: pour a heaping teaspoon into a cup of boiling water, let it steep for three to five minutes, and strain. Drink it plain or, as is common in South America, add roasted sugar and/or lemon juice; you can also try (non-traditional) mate with milk.
