It crystallizes slowly, and the crystals are coarse. This is due to the higher content of fruit sugar (fructose). It contains more fructose than glucose, making itsuitable in small quantitiesfor people with mild diabetes. In Slovenia, chestnut honey is also found in “medicinal honey” used for treating wounds.
