Organic coarse wheat flour is produced by grinding the central and middle parts of the kernel using a roller milling process. It is slightly coarser than soft flour. The coarseness of the flour affects its ability to bind water, so when baking with coarse flour, you get more dough, but it rises more slowly. It is suitable for making boiled dough, gnocchi, dumplings, flaky pastries, and pancakes, as well as for thickening soups and sauces.

Product Description

Durum wheat flour can be used for a variety of purposes. Because it contains a high amount of starch and high-quality protein, it is very versatile and has good baking properties. It is excellent for making homemade pasta and spoon-shaped dumplings, potato dumplings, gnocchi, and dumplings; it’s used for breading; and it’s also ideal for thickening sauces and as a base for rolling out or otherwise working with dough. Since particle size also affects the color of the flour, coarse flour is slightly darker than fine flour, but still white.
