Chickpea flour is made by grinding whole, ripe, and dry chickpeas. These can be roasted before grinding to give them a more intense flavor, or left unroasted. It is used in Arab, Indian, Asian, and African cuisines, and is becoming increasingly popular here as well.
Chickpea flour is naturally gluten-free and therefore an excellent alternative to wheat flour and flours made from other gluten-containing grains. It is a rich source of plant-based protein and also has a low glycemic index.
You can use chickpea flour to prepare a wide variety of dishes, both savory and sweet. It’s typically used as a substitute for (part of) traditional wheat flour, though you’ll need to pay attention to the ratio. If you’re substituting white flour with chickpea flour, you can generally use a much smaller amount. It works especially well in desserts that contain slightly stronger spices, such as cinnamon, nutmeg, or cardamom. Of course, you can also use it for baking bread and similar dishes.
