Kolenko Mill’s organic buckwheat flour is ground on century-old millstones carved from solid rock. It is ground fresh on demand, so it is always fresh. It is dark in color and has a distinctive aroma and flavor. It is naturally gluten-free, contains no gluten, and cannot be used on its own to make dough. Mix it with wheat or spelt flour in a 70:30 ratio, or 50:50 for mixed wheat-buckwheat bread. The flour can be scalded to cause the starch to gelatinize, allowing it to bind water even during the kneading process.
