Barley flakes can be eaten cold or warm, uncooked and crunchy or cooked and soft. They’re an excellent alternative to oat flakes. They can be used in many more ways than just the classic combination with milk or yogurt, and with the addition of fresh or dried fruit and nuts. When baking bread, replace some of the flour with the flakes to make excellent bread; you can also add the flakes to pancake batter, use them instead of breadcrumbs, or incorporate them into pastries, cookies, and stews. By mixing the flakes with fruit, coconut, and honey or sweet syrup, you can make delicious granola.
