Nothing beats beef soup! Even as it’s cooking, the house fills with the cozy scent of home. It’s one of the first things we want to eat when we return home from a trip. When it’s cold outside, it warms us up; when we’re feeling under the weather, it gives us energy.

Beef soup is also a staple on the menus of Slovenian restaurants. The Pr’ Kovač restaurant in Naklo is no exception. The aroma of beef soup has been wafting from their kitchen since the late 18th century. It’s likely that the Austro-Hungarian Emperor Franz Joseph I also enjoyed it there; he stopped by our very inn, tried the sausage, and was so impressed that he named it the “Kranjska sausage.”

The recipe for beef soup is thus part of their family tradition. Even today, they make it just as Grandma Slavko’s grandmother taught her: using the best cuts of meat and fresh vegetables from nearby gardens. Then, only two more things are needed for this delicious beef soup: patience for long, slow cooking, and love. They have both, and that’s how this soup came to be—a soup that we hope will bring the scent of home to you as well and remind you of the Sunday dinners your grandmother used to cook for you.
